I bought all the fruit for this at the farmers market. All local all in season and all so yummy. So I named this yummy fruit salad.
Ingredients:
1 bag cherries, halved and pitted
1 container strawberries, quartered
1 container blueberries
1 container blackberries
3 peaches, cut into bite size pieces
1 apple, cut into bite size pieces
1/4 cup lime juice
1/2 teaspoon ground ginger
2 tablespoons champagne
a little lime zest
3 tablespoons honey, add more if you need to
Make It:
In a large bowl, whisk together lime juice, ginger, champagne, lime zest and honey. Add all fruit to the bowl and toss to coat. Thats it, it is very simple and so good. Enjoy!

Peach Shortcakes
Not sure if that is a good name for these but I was trying to be creative. Whatever you want to call them they are delicious!
14 biscuits, homemade or from a can
1 1/2 cups sugar
1/2 cup butter, melted
1 cup brown sugar
1/2 cup butter
4 tablespoons cornstarch
3 bags frozen peaches, partially thawed
1/2 cup good spiced rum, I used Captain Morgan Preferred Stock
1 teaspoon vanilla
1 teaspoon cinnamon
2 tablespoons honey
Whip cream
Make It:
Preheat oven to heat called for on biscuit recipe. Heat a large pot over medium heat. Add butter and stir until melted. Add brown sugar, stir until mostly dissolved. Add rum, cinnamon, honey, and vanilla, stir to combine, allow to cook over low heat stirring occasionally. In another bowl, sprinkle cornstarch over peaches, stir until completely combined. Pour peaches into brown sugar mixture, stir to combine. Bring to a simmer and turn heat down, leave at a low simmer, stirring occasionally until thickened. Pour sugar into a flat dish(pie plate or tupperware)dip each biscuit top and sides into melted butter then press into sugar, place on baking sheet. Repeat with all biscuits. Bake for time specified on biscuit recipe. To serve take a biscuit, slice it in half, place on a plate and spoon a good amount of the peach mixture over biscuit. Top with whip cream. Enjoy!

Applesauce
Ingredients:
8- 10 apples we have had fuji the last two weeks so thats what I used but you can use any kind that is sweet.

Make It:
Put enough water in bottom of big pot to cover about 3 inches. Place steamer basket in pot. Bring to a boil. Core and quarter all the apples. Once water is boiling put apples in steamer basket, reduce heat and steam until apples are tender, about 30 minutes. Remove apples from heat and let cool. Put half the apples in the blender with some of the steaming water, blend until smooth. Add the rest of the apples and more water if needed, blend until smooth. Enjoy!

Abundant Harvest Box
This weeks box contained 3 eggplants, 4 zucchini, 1 head of cauliflower, 4 bell peppers, 3 bunches of grapes, 1 head baby bok choy, 1 carton cherry tomatoes, 1 bunch arugula, 1 head romaine, 17 red potatoes, and 10 pears. I also went to the farmers market this week and got a big bag of green beans, apples, fresh ginger, celery, scallions, chinese string bean, and mushrooms.

Pearsauce!
Ingredients:Pears(as many as you want to use)
You will need a big pot with a little bit of water and a steamer basket and a blender.
Make It:
Take the pears, core them and cut them into good sized pieces. Put the pot over high heat and once water is boiling turn down heat a little and add pears to steamer basket, cover. Cook until pears are tender 6-10 minutes. Turn off heat. Spoon pears into blender, blend until smooth, add add some of the water that you steamed them in if you need to. Be careful though it can get thin really fast. Continue until all are blended and smooth. I put a jar of it into the fridge for the week and froze a bag of it, to enjoy in the winter. The rest I froze as baby food.
I divided it into an icetray and put in the freezer. After it is frozen I pop it out and place in sandwich bags. At meal times I take out two cubes, defrost them and serve.
